Ok, so this picture looks pretty gross, but it really is a delicious treat! Since I took this picture, I've changed up my recipe a bit since I don't have the fresh blackberries anymore and I put the treat in the freezer now. (Better picture to come)
Amasi treat with Ultimate GreenZone recipe:
Amasai - about 1/3 a bottle
Vanilla Extract alcohol free - to taste - I find this on amazon
Ultimate GreenZone - 1 scoop
Your organic berry of choice - a handful or to taste. (My favorites are strawberries and blueberries). If I don't have fresh berries, I use organic frozen and defrost them a little in the microwave. (Probably not the best way).
Opptional: Cacao nibs or cacao beans broken up - to taste (I love the crunch they add and they are loaded with antioxidants!) I get these on amazon
I mix it all together and then I put it in the freezer for a little while to make an icy cold treat. The closest thing to ice cream I can have!
Amasai is full of healthy bacteria which is great for getting Candida under control! The Ultimate GreenZone cuts down the sour taste of the Amasai. Together, it makes a perfect treat. This is probably only tasty to someone who has been off of sugar for a little while. I look forward to it every evening after dinner!

Mexican Salad
My husband made this delicious salad for me because I have been missing Mexican food so much. It is now one of my favorite meals! He sure is a blessing to me!
Peter's recipe:
Meat:
1lb lean ground beef or turkey
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon cayenne
1/4 teaspoon oregano
1/2 teaspoon paprika
1/2 teaspoon cumin
1 teaspoon seas salt
1 teaspoon pepper
Cilantro
When choosing your spices always check the indigence and make sure there isn't any sugar or other foreign items you don't recognize.
Brown the meat in a skillet. Add garlic powder, onion powder, teaspoon cayenne pepper, oregano, paprika, cumin, sea salt, pepper. Add cilantro to meat when finished cooking.
Salsa:
About 4 or 5 roma tomatoes
Small white onion chopped
Cilantro
1 lemon squeezed
1 lime squeezed
Garlic powder to taste
Sea salt to taste
Black pepper to taste
Cayenne pepper to taste
The salsa always turns out different depending on the taste of the tomatoes,etc. So my husband never uses an exact measurement. Since we can't use sugar to cut down on the acid, sometimes the acidity is a little strong. It helps me to drink a cold glass of unsweetened coconut/almond milk to cut down on the spice. You could also choose just almond milk or whatever you prefer. I find it very satisfying with the coconut/almond milk!
Combining:
I put a bed of healthy lettuce on a plate (I buy an organic spring mix of red and green romaine, red and green oak leaf, red leaf, lollo rosa, Tango, Mizuna, Red and green chard, baby spinach, arugula, Frisee, Radicchio.) I add about 3 large spoonfuls of the meat then top it with the salsa!
I store everything in separate containers and have it everyday for about a week! Just delicious!

Almond Coconut Bars
This is my favorite recipe I've found so far for the Candida diet! I found it on The Candida Diaries! I made them to take on our vacation to Florida and I kept them in the ice chest. They lasted me the week! I changed just a little from this recipe and I have noted my changes below the recipe.
Amy is the author of Candida Diaries and this is her recipe:
"These no bake, high-protein, high-fiber bars are based upon Melissa Diane Smith’s recipe for Amaretto Protein Bars in her book ‘Going Against the Grain’ and are easy to make. Roasted cocao nibs add extra chocolately flavor without the sugar. These make a great snack, a healthy dessert or a breakfast on the go!
Ingredients:
2 cups raw almonds
1/2 cup flax meal (flax seeds ground in coffee/spice grinder)
1/2 cup shredded unsweetened coconut
1/2 cup unsalted almond butter
1/2 teaspoon salt
1/2 cup coconut oil
stevia to taste
1 tablespoon vanilla extract
1 cup cocao nibs
Procedure:
Place almonds, flax meal, shredded coconut, almond butter and salt in a food processor and pulse to combine. No need to pulverize everything, some big almond pieces add texture and crunch!
In a small sauce pan, melt the coconut oil over very low heat.
Remove the liquid coconut oil from stove and stir stevia, and vanilla into the oil.
Add the coconut oil mixture to the food processor and pulse until the ingredients form a coarse paste.
Press the mixture into an 8 x 8 glass baking dish
Chill in refrigerator for 1 hour, until mixture hardens.
Remove from refrigerator, cut into bars and serve or store. These keep well in the freezer or refrigerator."
What I have changed:
I can't have Stevia yet, so I just didn't include that in the recipe. I used sea salt and make sure your vanilla is alcohol free. I found some made with glycerin on amazon.com. I also didn't have any cocao nibs at the time, which I have now ordered from amazon as well. But instead of cocao nibs I used 100% cocoa bakers chocolate. I just chopped it up to measure it before adding it to the food processor with the almonds, etc. Amy mentioned that she added the cocao nibs in at the very end so they didn't get chopped up to much. I also shaved some of the baker's cacao on top of the bars and added some shredded coconut on the top as well before putting it in the fridge. I love these bars! Make sure to drink plenty of water with these because the flax in it soaks up all your water. At first I didn't drink enough and I got a stomach ache, so soon as I drank some more water, it went away! Thanks to Amy for a fabulous recipe!

Simple and Tasty Scrambled Eggs
Very simple to make, scrambled eggs with tomatoes, onions, and sea salt and pepper to taste. Eggs have become a very important part of my diet. This was very simple to throw together in a frying pan. I just used one egg, a small part of a tomato and a very small part of a white onion chopped up. Got to love eggs!

My Favorite Way To Make Almond Flour Pancakes
These Almond Flour Pancakes have been a staple in my diet over the last few weeks. I got the original recipe from The Candida Diaries. I finally found some Vanilla that is made without alcohol! The original recipe from The Candida Diaries is:
"Ingredients:
2 eggs
¼ cup almond milk (this is just a place to start, add as much as you need to reach proper pancake consistency.)
1 tablespoon vanilla extract
1 ½ cups blanched almond flour ( I used whole, raw and toasted almonds and ground them up in my coffee grinder)
½ teaspoon celtic sea salt
½ teaspoon baking soda
neutral oil for sauteing: sunflower, veggie oil, coconut, ect
Warm sunflower oil in a large skillet over medium heat
What I have changed from the original recipe:
I start with 1/2 cup almond milk (I will try Coconut milk in the future because it has anti-fungal properties.)
I use coconut oil to cook it in.
A side note: I have found that throwing raw almonds in my bullet blender is tastier than buying already blanched almond flour.
I also love to add organic blueberries to the mix. Then I top with organic strawberries. I use frozen ones and thaw them out. They taste very yummy to me now.

- Pancakes will form little bubbles, when bubbles open, flip pancakes over and cook other side

Makes at least 12 pancakes
I used a cast iron skillet to make these pancakes. This is a lot of
batter, I made as many as I wanted to eat and then put the batter in the
fridge to use later. The next morning I heated up the skillet, thinned

Lemon Tumeric Chicken Soup
This is the first time I've made anything without a recipe! It turned out pretty tasty!
Ingredients:
1 organic avocado
1 carton of organic vegetable broth (check the ingredients and make sure there is no sugar)
1 fresh lemon (squeezed)
1/4 of a white onion chopped
2 garlic cloves pressed
2 organic chicken breasts
salt to taste
pepper to taste
tumeric to taste
I just turned on my slower cooker to high and put the carton of vegetable broth in. Then added the 2 chicken breasts. I squeezed one lemon in and added the onion and garlic. I didn't measure the salt, pepper or tumeric, I just sprinkled it all in there. Don't add the avocado until you are ready to eat. I just cut up an avocado and put what I wanted in my bowl of soup. This didn't make a whole bunch of soup, but I was just cooking for myself. My husband isn't a big fan of soup. It lasted me a few days, and each time I would put fresh avocado in my bowl of soup. I cooked it on high until the chicken looked like it was done about 3 or 4 hours. I pulled apart the chicken in the slower cooker and kept it on warm until it was time to eat.

Almond Butter on Celery
I'm not a fan of celery, but Almond butter sure makes it taste better! It's a great alternative to peanut butter, since that is not allowed on the Candida diet. What a great between meal snack!

Guacamole with Flax Seed Crackers
A very healthy and tasty snack! Or more like a meal for me. I got this flax seed cracker and bread recipe from The Candida Diaries. It is actually really simple. Its a great way to have something like bread or chips. So far I've only had it with guacamole but I'm sure I will be trying it with other things. I tried to make the chips, and I had it in the oven a lot longer than the recipe said. The edges got really crispy and part of it burnt, but the inside really didn't get crispy. So I think I will have to work at it some more to try to make chips.

5 Minute Healthy Sauteed Cauliflower with Tumeric
I'm trying to spruce up my vegetables a little. I came across this recipe on WHFoods. I really liked the flavor the tumeric added. It was a very easy recipe and tasty. I thought the cauliflower could've cooked a little bit longer because it was still crispy. Overall, a very quick and tasty recipe. Find the recipe at WHFoods.

Craving Dove Dark Chocolate
The last couple of days have been tough on me. The Candida diet is really tough emotionally. Yesterday I really craved Dove dark chocolate. Eating it is a whole experience, but isn't that the way with chocolate. That and coffee is what I miss the most. Since Candida feeds on sugar, it will cause intense cravings to get fed. So although it may be really hard to resist, you must stand strong and refuse the craving. Well I was really craving almost anything I wasn't supposed to have. So my strategy will be to dig into God's word and find something I love to do and do it.
"For the word of God is alive and active. Sharper than any double-edged sword, it penetrates even to dividing soul and spirit, joints and marrow; it judges the thoughts and attitudes of the heart." Hebrews 4:12
So I will fight this with the word of God! He helps me overcome and takes over when I am weak!
I was reading a blog the other day called The Candida Diaries. The author is Amy, board certified holistic health coach and she wrote in her post Flat Bread and Crackers, or, Why I Love Flax, "But they weren’t bad and gave me the inspiration for intentionally making a big, thick ‘flat bread’ which is pretty awesome for someone who hasn’t eaten anything remotely like a sandwich in years!" She was talking about her first attempt at making flax seed flat bread. But it really concerned me when I read that she hadn't had a sandwich in years. I definitely miss bread. The flax seed bread will be my next recipe to try. I'll let you know how it goes.

Frittata With Grated Zucchini, Goat Cheese and Dill
I made this recipe from The Candida Diaries for dinner this evening. It was a lot of work for me but I think I'm becoming more of a cook! My 17 month old son loved it! I have plenty left over for the next couple of days.
Almond Flower Pancakes with Almond Butter
I got this recipe from The Candida Diaries. Her recipe is Vanilla Almond Pancakes with Lemon Curd. I left vanilla out of mine and I topped it with Almond Butter. I like the consistency of these pancakes a lot more than the Coconut flour pancakes. I'm on the hunt for Vanilla Extract made with glycerin instead of alcohol then I will try that in the pancakes! It's convenient to make a couple and save the batter. That way I can have them for the next couple of days when I need something similar to bread. I would make the lemon curd but I am not supposed to have stevia or xylitol at this point. I used coconut oil to cook them in.
Candidia Diet and Weight Loss
Since I've started my Candida diet a couple of weeks ago, I've lost 7 pounds. Now I wouldn't have chosen this diet for weight loss, its not really healthy for anyone, but its necessary to get the Candida under control. It is a side benefit for me and one positive outcome I'm focusing on during this time. I'm excited to one day get into some of my old clothes and feel better!

Roasted Asparagus
I got this asparagus from my garden and decided to try a roasted asparagus recipe. I would've made more, but that's all I had. Asparagus takes 3 years to grow until you can actually eat it. We were blessed when we moved here since the previous owners had planted it 2 years ago. So this year is the first year I have cut some. I adapted the recipe from She Wears Many Hats. Since I only had a few asparagus I just drizzled some extra virgin olive oil and squeezed some juice from a lemon onto the asparagus. I roasted it at 400 degrees 7 minutes on each side. I've never eaten asparagus before, but I loved the crunchy tops but didn't like the soft stems. I will have to try steaming it next time!

Coconut Flour Pancakes
These are the Coconut flour pancakes I made. I got the recipe from The Candida Diaries. I cut the recipe in half from what The Candida Diaries have. I used organic unsweetened coconut milk and coconut oil in the pan. I didn't use any spices either, so I'm sure her recipe would be tastier. I just don't know exactly what I can have yet. I'm planning on going to see Dr. Mary Schrick at Full Circle Health Clinic so I can have more direction with my diet. So these pancakes were ok, but I didn't like the consistency very much. However, I did make them more than once. It did give me something like bread, since I am not able to have bread. The organic strawberries really helped!
